The
British sometimes use the word 'Pudding' to
mean any sweet dessert. As John Mariani states in his 'Dictionary of American
Food & Drink', "pudding is a term describing several different desserts, usually
cooked, including cake like confections such as plum pudding; or a dish of suet
crust containing fruits and sugar; or a spongy steamed dish; or a pastry crust
filled with chopped meats, like kidney; or Yorkshire Pudding, a crisp bread like
side dish made from a flour-and-egg batter cooked in pan drippings". Sweet
Puddings range from milk-based to custard-based and can be steamed, cooked on
the stove (sometimes in a double boiler) or in the oven (usually in a water
bath). The trick is to cook them slowly to prevent curdling so the end result is
a soft and creamy dessert that can be eaten hot, if you can't wait, or cold, if
you can.
Below are several
of my favorite recipes for puddings that I hope you will try
and enjoy. Stove top puddings include the Banana Pudding,
Butterscotch Pudding, Chocolate Pudding, Panna Cotta, Rice
Pudding, Tapioca Pudding, Chocolate Mousse, and the Vanilla Pudding. For oven
baked puddings there is the ever popular Bread Pudding, a
delicious Lemon Sponge Pudding, the Molten Chocolate Cakes, and a Pumpkin Bread Pudding. |
